{crock pot} meatless chili



ingredients 
1 can diced tomatoes 
1 can stewed tomatoes 
1 can black beans 
1 can red kidney beans {i had light in the cupboard but, dark would work too} 
1 can cannellini beans
1/2 c frozen corn or canned corn
1/2 can of water {OPTIONAL-if you don't like chunky chili like me}
red pepper flakes 
chili powder 
cumin 
onion powder 
garlic powder 
salt + pepper 

1. gather all your ingredients and open your cans. {be warned that is probably the hardest part of the whole recipe} plug your crock pot in. 

2. put all ingredients into crock pot. 

3. next you add your spices. i didn't put measurements because i honestly just eye balled it and went with what felt right. {haha} if you like it spicy i would add about a tsp and half {you can always add more later if you want it spicer} of chili powder, red pepper flakes, and cumin and if you are like me a medium spicy type of person i added a little over a tsp of chili powder, red pepper flakes and cumin. add a little over a 1/2 a tsp of the rest of your spices. 

4. give a little stir and put the lid on it. leave it to cook on low for 5-6 hours or high for 2-3 hours. 

5. serve with rolls, or corn bread + top with sour cream, cheese or any other toppings you desire. ideas; green onion, red onions, tomatoes, tortilla chips, etc  

now, if you man is super against the meatless idea you can add a frozen chicken breast in after you put all canned ingredients into crock pot or brown some ground beef or turkey and add it in at the start. i chose meatless because, i was sick of chicken and didn't have any other meat so....meatless chili it was. it was so yummy and perfect for the crisp fall weather! 

enjoy! this would probably make a perfect conference sunday dinner. :)

a recipe//thai chicken pizza

 
if you didn't know....we love us some pizza in casa de clark. we really love papa murphy's thai chicken pizza. like really love it. the other day we were at trader joes and i found this sauce sweet chili sauce and i said babes, we can make our thai chicken pizza. he was totally in. 

we made our pizza the other day and guys, it was so yummy pretty much just like papa murphy's. next time i will try to make the crust super thin. i rolled it out thin but, it got thick again. it was still super yummy! 

ingredients: 
1 small zucchini-sliced super thin 
1 small chicken breast cooked to your liking and sliced thin {i just cooked mine on the stove with some salt and pepper} 
mozzarella cheese {as much or as little as you like}

directions: 
1. make your favorite pizza dough or use store bought if you want, then roll it out super thin. preheat oven to 425.
2. put crust on baking sheet and sprinkle some sweet chili sauce on it. 
3. now layer some cheese and place your chicken on. 
4. layer some zucchini and top with a little more cheese 
5. sprinkle some more sweet chili sauce on it. {as much or as little as you like}
6. bake in oven for 20 min at 425. if crust is thinner i would watch closely. 
7. ta da its done and you get to stuff your face! {yeah we made bread sticks too. i love bread!!}

i love this pizza because it doesnt seem super heavy and it's not loaded up with cheese and sauce. its just too darn yummy!

this more like a dinner tutorial


we went to trader joes this weekend in slc and i picked up some of their yummy orange chicken. im all about easy dinners, and a bonus when the hubby loves it too. so you ready for the easiest dinner ever?! you could really just read the back of the package or you can read this:

+ pre heat oven to 400 degrees.
+ cook your favorite kind of rice. {i use a rice cooker, so i start it before i cook my chicken}
+ open your frozen chicken and take our sauce packets. spread frozen chicken on baking sheet and bake at 400 degrees for 18-20 min until golden brown.
+ while chicken is in the oven, pour sauce packets into sauce pan and simmer on low heat until chicken is done.
+ when chicken is done dump into sauce pan and stir all together in the yummy sauce.
+ now serve over rice and top with sesame seeds && ta-da you're done!

talk about one easy and yummy dinner. anyone can make this, and i mean anyone. seriously that took what 30min right and it's pretty fool proof. if you have a trader joes near you, get you booties there and get some orange chicken. pssstt...all you utah readers the one in SLC is cray cray since it just opened but, in my opinion this is totally worth it!

the most perfect fall soup


ingredients
1 lb ground beef or ground turkey
1 medium sized zucchini
carrots {i only had baby ones so i used about 8 baby carrots or you can use 1 large carrot}
1/2 c celery 
2 cans beef stock
1 can of stewed tomatoes 
1 can diced tomatoes {i used italian style but, plain would be fine too.}
1 can white kidney beans 
1 can red kidney beans 
1 cup cooked pasta {i used what i had the the cupboard. i would suggest a shaped pasta}
fresh parmesan 

spices {i tend to eye ball my spices. so use as much or as little as you like!}
garlic powder
onion powder
red pepper flakes 
dried oregano 
celery salt 
salt & pepper

directions
+ brown your meat in a skillet until cooked.
+ chop zucchini, celery and carrots place in crockpot or pot.
+ pour beef stock, beans, and tomatoes in crockpot or pot.
+ now add all your spices and stir well.
+ if your cooking in a crockpot, cook on low for 6-8 hours. if your cooking on the stove in a pot, cook on low heat for 2-4 hours. {just long enough for all flavors to simmer and get yummy!} 
+ 30 min before you want to eat cook your pasta and than add to soup. let simmer for 30 min. 

&& now dish it up and add some fresh parmesan on top. ENJOY! {we had this with crescent rolls...it was yummy!} it makes a lot so, invite friends over or plan for leftovers!
